Tempeh/Tofu in Caramelized Soy Sauce

I’ve been promising to share this recipe for a few weeks now. Today’s the day!

I have no idea why or how, but I’ve been receiving a copy of Today’s Diet & Nutrition magazine. It’s alright. A recent issue featured an article about exotic spices, which not only contribute loads of flavor to dishes but also have lots of health benefits.

The magazine featured a recipe for braised pork in caramelized soy sauce, but I’m not a fan. So I made some improvements and subbed the main protein (tempeh or tofu, whatever I had on hand).

Tempeh/Tofu in Caramelized Soy Sauce

Ingredients:

  • Olive oil
  • 1 tsp ginger (powdered or fresh grated)
  • 1 tsp chili powder/red pepper flakes/cayenne pepper
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • salt & pepper to taste
  • 2-3 cups cubed tofu/tempeh
  • 1 large red onion, cut into thick rings
  • 2-3 TBS soy sauce
  • 2-3 cups kale, cut into small pieces
  • 1-2 cups broccoli/other veggies you like

Directions:

  1. Heat oil in a saucepan over medium heat.
  2. When oil is hot, add all the spices and half the onion. Salt lightly. Cook until onion turns brown and smells awesome, about 5-7 minutes.
  3. Add the tempeh/tofu and cook until it’s mixed well with the spices, about 5 minutes.
  4. Add the remaining onion and the soy sauce. Cook for a couple of minutes.
  5. Lastly, add the kale/other veggies and cook just until wilted.
  6. Remove from heat and serve hot.

It’s delicious with lots of hot sauce (but what isn’t, right?)

What I love about this recipe is how easy it is to modify it. Use a different protein, different veggies or even different spices. Your kitchen will smell fantastic for several hours, another plus!

Sounds delicious! I have only had tempeh twice and it was kind of bitter both times- spicing it up sounds like a good solution.

Favourite spice… I have a slight obsession with paprika!

Oh man that sounds good! Carmelized is a descriptive word you can never go wrong with! :) My favorite spice is paprika.

Thanks for the recipe. I adore spicy food!! My dad is the spice master but I never make spicy food myself. I am too intimidated since I don’t know which spices pair well together. I should just give it a try!
