Chorizo & Vegetable Frittata

The Russian supermarket isn’t my favorite place in the world. Someone always hits me with a shopping cart without apologizing. Bread and meat are cheap but the box of cereal I want is outrageously expensive. My dad spends half an hour salivating over the beer selection (okay, I’m guilty of this too).

But sometimes, I wonder off and find something I haven’t seen there before. This week, it was spicy chorizo:

I was curious, and rightly so. It made for a great frittata addition.

Spicy Chorizo & Vegetable Frittata

  • 4 large eggs (or egg substitute of your choice)
  • 3 TBL of milk
  • 1 TBL olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ~1 cup broccoli, cut into small pieces
  • ~1 cup spinach
  • 1/2 cup chorizo, cut into small pieces
  • 1/2 cup extra sharp cheddar cheese, shredded
  • ~1 TBS dill (or more. I’m a dill addict)
  • salt and pepper to taste

Directions:

  1. Preheat oven to 325F
  2. In an oven safe skillet, heat oil over medium heat.
  3. Add onion and garlic, followed by salt and pepper. Saute for 3-5 minutes.
  4. Add chorizo and broccoli, cook for 5-6 minutes.
  5. Meanwhile, combine eggs and milk in another bowl, beat lightly.
  6. Add spinach to the chorizo & veggie mixture, cook for a few minutes.
  7. Add cheese and dill to egg mixture, pour in skillet and even out.
  8. Let cook for about 3-5 minutes until egg is set around the edges of skillet.
  9. Place in oven on medium rack and cook for 10-15 minutes, until eggs are fully set and cheese melted.
  10. Let cool and enjoy warm or cold. Also delicious with some serious hot sauce!

I got leftovers for days.

That frittata looks amazing. I’ve been trying out a lot of different leek-like vegetables lately in my quest to make some potato-leek soup. Everytime I go I buy the wrong veggie. I’m bring a picture of leeks with me next time!

Something I definitely need to do more often is buy ONE new thing. I did buy and acorn squash and cooked it in a new way last week, so that was a good step.

I haven’t picked it up yet, but all the fruit stands near where i live sell star fruit…which I’ve had once, in Australia. i want to try them again!
