Life and pie.

I apologize for not posting yesterday. I had two back-to-back exams today, so I spent the day studying. It was nice to get home and discover that the lovely Ada honored me the Kreativ Blogger Award. Thanks Ada!

Upon acceptance, I’m supposed to list seven random facts about myself. How about I use them to talk about these past few days?

  • In my anthropology class today, a student talked about her trip to Mongolia. It made me want to go there. The temperatures might get to -20F but there are baby goats. Who doesn’t want to hold a baby goat?!
  • I realized that when I study, I retain the information easier if I simplify it in… a Fresh Prince of Bel-Air manner, as my friend put it last night. For example, “And then Jefferson was like ‘whatchu talkin’ about yo? That Sedition Act ain’t right! Peoples gotz to criticize their governmentz, ya dig?’ ” I don’t write like that on the exams but it helps me review the info :)
  • All day long, I looked forward to baking a pie tonight.
  • Right now, I’m watching a Spanish horror filmed called REC with my roommates. I LOVE scary movies.
  • For lunch, I had a peanut butter and prune sandwich. It was delicious, regardless of how it sounds.
  • I’m currently wearing purple Triple Five Soul sweatpants. I have 3 pairs of these…they’re really comfortable.
  • I’m going on vacation in December and have already started compiling a reading list.

I’d like to extend the award to all those who haven’t gotten it. Don’t make me decide, it’s too hard! :)

I’d like to submit my dinner to the Blogger Secret Ingredient for this week, which is acorn squash. I present to you the…

Crustless Squash-prise Spinach Pie

Ingredients:

  • 2 cups cooked squash (I used a mix of spaghetti and acorn)
  • 1 box chopped spinach, thawed
  • 1 medium onion
  • 1/2 cup cottage cheese (ricotta would work too)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 eggs
  • 1/4 cup flaxseed meal
  • salt & pepper

Directions:

1. Preheat oven to 375 F.

2. Dice the onion and saute it over medium heat with olive oil and pepper.

3. Add spinach and salt to taste.

4. Mix the cooked spaghetti and acorn squash with cottage cheese and most of Parmesan cheese.

5. Add the eggs and flaxseed. Mix well.

6. Lastly, add the onion/spinach mixture.

7.  Spray a pie dish with non stick cooking spray and pour in the contents. Sprinkle with the left over Parm cheese.

8. Cover with tin foil and bake for 30 minutes. Take off foil and bake for 5-10 more minutes. Let cool off slightly and enjoy!

I recommend pairing it with something salty (I had mine with pickled mushrooms on the side). It’s slightly sweet and tangy from the squash and cheese combo. Can’t wait to have this tomorrow!

I’m really glad that the weekend is finally here. I hope I did well on my tests today, even though someone refused to let me study yesterday…

That looks great! My favourite pie is Banoffee, though it’s not really a ‘pie’…pecan, pumpkin, peach, cherry, chicken…I love pastry so all pie is good in my book!

You’re kitty is so cute. One of the biggest things I miss about college is how I could almost live in sweatpants. My favorite kind of pie is apple pie, traditional but delicious.
