‘Cause this is my stop.
For the past few weeks, I’ve been experiencing severe symptoms of:
- homework neglect or avoidance
- trouble concentrating in class
- increased rate of glancing at the clock
- escalated dreaming about December
That’s something I don’t need WebMD to help me diagnose. It’s senioritis. It may seem like it’s a little bit too early, since most seniors are stricken with the disease closer to May, but I’m graduating this December, so…
Yeah. My undivided attention is currently dedicated to two classes, since I care about the subjects and love the professors who teach them…But the other three?
Let’s just say I spend a lot of my time trying to answer life’s most beckoning questions: what’s a five-letter word for an Agile Old World viverrine? Genet. What’s the term for a protective ditch around a castle? Moat. At least the crossword puzzles keep me awake, right?
I started my day with a large cup of coffee and a delicious breakfast cookie, topped with ricotta cheese, de-frosted berries & shredded coconut.

Then, there was class. For lunch, I brought the rest of my quinoa with red beans & broccoli:

And an apple:

I got a big bag of shredded red cabbage for a $1 on a “special today!” deal at the store, which leads me to believe I better use it fast.
One of my favorite cabbage recipes from the blog world is for okonomiyaki, which Maggie calls a “Japanese frittata.” I’ve made it once before following Maggie’s recipe, and after seeing Diana’s version, I just had to make it again!
To make the flipping over easier, I made 2 small ones. I used hot sauce as a topping:

I’m really excited for the Office tonight! Because of the severity of my senioritis, it’s recommended that I recline as much as possible, as so:

yay for ricotta AND THe Office!!!! wasn’t it hilarious?!? Oh, love it.
I like to either:
lounge around and do nothing
do everything I can’t ever do on normal days: shopping, sit and read in a bookstore, etc.
Yeah, Ferris! I have some serious senioritis issues too…
I hit seniorite spring of my junior year of college. But not till my last semester of law school.
Love okonomiyaki. I’d never heard of it until meeting my husband who lived in Japan.
That Japanese frittata looks amazing! I never know how to cook cabbage.
Yay for the Office! I forgot it premiered tonight and got a nice surprise when my TV started recording it
Yum, that frittata looks good! It sounds like pajun (Korean scallion pancake)…sort of! (This coming from the worst Korean of all time.)
I swear, towards the end of the summer I actually told myself I was EXCITED to have school again. Welp, that changed fast.
