I got those.
After some hair pulling and about 3 hours on the phone with Comcast, we finally got internet at our beloved house. It feels good to be connected to the world again!
I don’t have any classes on Wednesdays so I planned to write 4 out of 6 essays today. They’re not even school related…I hope to explain that one soon
For breakfast, I made blueberry pancakes, layered with TJ’s ff European Style Plain yogurt & drizzled with honey. Good thing I’m not studying to be an architect because this structure was a complete mess. At least it was a delicious one.

By the way, I use this pancake mix that I got at Whole Foods. Just add water/milk:

After Essays 1+2, it was time for my run. I felt like wearing my “these shouldn’t see the light of day” workout clothes, so I opted for the treadmill. I only had 1.5 miles on the schedule today but it was so hard!
I remember the days when I the idea of running outside terrified me. I thought it would be so difficult and horrible. But now that I’ve been doing it for a while, I sort of despise the treadmill. Not only do I lack the scenery but the pacing is hard. I can run a 10-minute mile outside because I can run fast, then slow down, then pick up my pace again. When the treadmill is set to one speed, I’m like “what’s happening?” This winter’s going be to a tough one…
For lunch, I had some quinoa (thanks for suggestion Brandi!) that I cooked in chicken broth & added steamed broccoli & red beans for extra nutrients, ’cause I need those.

I also cut up and toasted a TJ’s whole wheat tortilla into chips + warmed up salsa with some cheese:

My roommates and I went on a massive food shopping trip and were practically starving by the time we got home. We quickly assembled some burritos with beans, rice, onion, brown rice, cheese & salsa…I was really hungry, so I’m sure you understand the urgency of my action and the lack of a photograph
Over dinner, we scrutinized each other’s grocery bills. Liz still saved the most: 34%! I might resort to sabotage next time and throw some fancy cheese into her cart when she’s not looking..Sshhh…

I’m obsessed with the light and fluffy texture of quinoa….and it’s been way too long since i’ve had it in my life! It’s also been wayyy too long since i’ve had a delicious pancake mess!! This all needs to be fixed…asap!
Mess or not, that pancake “structure” looks divine.
I still haven’t tackled the task of outdoor running. I’m still scared of it. Someday I WILL break from the treadmill. Though I almost don’t want to right now for fear of learning that I LOVE running outside only to shortly after have to go back to the treadmill when those dreaded winter months hit. We’ll see!

Blueberry pancakes=heaven! It’s been way too long since I have made myself some pancakes. Sweet skills? Hhm… can’t say that I have any. Well, I used to be a gymnast so I can still do backflips? Does that count, haha..
