I know my mom reads this blog, but c’mon. It’s too good not to share.
So I still don’t have interwebs at my house and classes started yesterday. Can someone remind me why I thought it would be a good idea to take 5 classes in a row on Tuesdays? Yeah, I don’t get it either.
At least the walk the crawl home was pretty last night:

In my last days of homework-less freedom, I mentioned that we had plans for some Puerto Rican food. We drove to Holyoke, a town nearby (where volleyball was invented!) to go to Mi-Plaza Restaurant.

Holyoke is the poorest city in Massachusetts and the prices definitely reflect the unfortunate fact. We got huge plates of yellow rice, beans, chicken and boiled yuca for around $6. I’ve never had boiled yuca before and liked it, although I still find the texture a bit strange.

So.Good.
Our school had a Welcome BBQ for the new freshman class…and guess what was there? Chocolate milk. I don’t think I attended any BBQ my freshman year, so my roommates and I joined in and retroactively took what’s ours. Let’s just say I’m set with post-run fuel for a while…

Other than that, my meals have consisted of oatmeal, sad-looking tin foiled wrapped sandwiches and vegetable stir-fries, nothing impressive.
I already have enough work to keep me busy for a while, so I better get to it. I hope it will help me deal with my intense blogger world withdrawal. I promise to pop in from time to time before I finally get internet next week at the house.

You have a LOT of class! 5 in a row? Dang. I think you should get a slow cooker if you don’t have one already. Throw some stuff in there in the morning before you go to class, and by the time you come back at lunch time, it’s ready! With leftovers for the next couple days.

make a big batch of quinoa or cous cous with some beans, veggies, and cheese and bring it in tupperware with some spinach for a deeelish lunch!

So to change it up, I recommend buying some diff veggie burgers!!! They are AMAZING in wraps and sandwiches with some hummus and/or other veggies and/or ketchup and mustard. If I could, i’d eat ‘em everyday!

I had a pear-walnut-feta salad today that was pretty good. Fall fruit salads are the best!!

I’ve been having lots of leftovers for lunch- say I make salmon for dinner, I make an extra piece and do a salad or wrap the next day. Always delicious, and really easy to just heat up!

I had an awesome lunch today- canned salmon mixed with couscous, chick peas, dried apricots, harrisa paste and chopped peppers/carrots. Also still on my tuna/kidney bean/rice/salsa salad kick…

grain salads are great – make a batch on the weekend and have it for a few days. good cold or room temp.
Today I had a yummy sandwich made out of an Arnold Thin, reduced fat peanut butter, dried cranberries and 3/4 of a nectarine (sliced). It was good and filling! I think it would be great as a breakfast sandwhich, too.
