Anticipation & Procrastination

My parents are driving me to Amherst tomorrow (Saturday), but even if my mom didn’t say it every day (“I can’t believe you’re leaving already!”) the proximity of school makes itself known in other ways.

Textbooks I pre-ordered are slowly making their way to my house:

My parents are hauling home “surplus” office supplies from their jobs for my use in school: :)

I’ve been engaging in back-to-school shopping, even if I don’t really need it:

I spend a lot of time making and going to check-ups and appointments. My dentist prescribed me an antibiotic to prevent infection as my wisdom teeth come in with the strangest side effect I’ve ever seen:

Is my heart going to stop? Will I go into a coma?

But most importantly, I’m out of oatmeal:

Although I’m really excited to go back I’m not that thrilled about packing. Why do I have so much stuff?

I woke up at 7 this morning to go on my run but it was raining. When I woke up 3 hrs hours later, it was still raining. So I decided to make breakfast and wait out the rain. I made a leaning tower of pancakes and used the recipe Betsy posted.  I didn’t have ww flour, so I used 1/4 cup of flax meal and about 2 TBS of regular flour. I also omitted the oil.

I put Stonyfield Farms Vanilla yogurt in between the pancakes and topped the tower with unsweetened shredded coconut & walnuts. DAMN, this was good. Thanks Betsy!

To take a break procrastinate packing for school, I decided to bake my mom macaroons. She loves anything coconut and she’s done so much for me this summer. The least I can do is make her treats :)

I used Alton Brown’s recipe and they turned out fantastic!

The pancakes held me over really well and I had this wrap before I left to meet my mom to do some last minute shopping:

I bought a pair of shoes & some new workout pants (yay!) For dinner, my mom and I went out for sushi together. We got a variety of rolls and took some home too.

I’m off to finish packing and hit the hay. I gotta go on a run tomorrow, since I couldn’t today and hope it doesn’t rain all day again.

I’m not sure what my internet situation is going to be like once I go back to school, so I apologize in advance for the possible M.I.A.-ness.

hey! im a reader of this blog and never commented..but im in pharmacy school and the reason you dont want to lay down after taking it is it can irritate the lining of your esophagus if you do that! just wanted to let you know :)

Oh no textbooks. I keep forgetting that I have to start thinking about getting those. I dread, I dread!

The pancake tower looks mouthwatering. I haven’t made pancakes in WAY too long now.

And the sushi. Ohhhh the sushi. How I love the sushi. Never tried something baked like that though. Looks delicious!
