Because after today, all my academic work for the semester will be done. Unless I stay up past midnight to do it
Before I get to my usual ramblings, I want to explain Gladice. We eventually found out that this magical unicorn creature was given to us by one of our neighbors because she thought we’d appreciate it. She’s a beaut!
Last night’s potluck was really fun. My house made chili, cornbread (from TJ’s cornbread mix, it’s ballin’) and pasta salad. There were other delicious eats:

I felt really good about what I ate. Usually, I totally over do it at potlucks but last night, I felt I ate just the right amount.

Fruit salad with lime juice and paprika. Surprisingly delicious.
There were lots of desserts, including cookies, pecan pie, brownies and apple pie. I settled on a piece of amazing zucchini bread and a mini-chocolate muffin/cupcake. The girl who made them told me the only ingredients are cake mix and canned pumpkin. They were really good!

After I finished the desserts, another classmate showed up with a bunch of organic greens and her unbelievable salad dressing. She makes it using olive oil, balsamic vinegar, tamari sauce, maple syrup, lime juice and other things I’m forgetting but it is so so good. So I had more salad!

Then we hung out, watched Magic destroy the Celtics (I don’t want to talk about it) and dispersed, but of course only after making plans to hang out later this week.
I woke up this morning craving waffles again.

Then I walked to campus to drop off my 12 page paper. Argh, 2 more due tomorrow. But then it’s over. I got back and made lunch.

Tuna salad with melted baby muenster cheese on top of a La Tortilla Factory ww wrap

Plus a tomato, cucumber slices & spinach from the Farmer's Market!
“What’s in this tuna salad?” Tuna Salad
- 1 can of tuna in water, drained
- 1 TBS plain hummus (I used Sonny & Joe’s)
- 1 TBS ff Greek yogurt (I used Chobani)
- paprika, pepper, chili powder, salt to taste
- 6-10 white grapes, sliced in half
- parsley flakes
Mix it. Eat it.

I usually love rice vinegar in salads!
i used to be a huge fan of ranch…but i now actually like using salsa or hummus as dressing.

I make a mean honey-mustard vinaigrette. I definitely prefer tangy dressings on mah’ salad!

Yo. I want you to know that I have bee reading your blog for a while now. You have gotten me in to other food blogs. Great…and an awesome way to procrastinate. I;m so excited for our date later this week. Ah man. Romantic walks in the woods. And my favorite dressing is probably oil and vinegar when my grandma mixes it (she gets the proportion just right!) and Annie’s Goddess Dressing. Love you!

Dang. How’d you restrain yourself? I’m such a horndog at potlucks. I have to really watch it with the desserts. I’ll like, skip everything else to eat dessert. Sick!

My fave dressings as of late include Annie’s woodstock or goddess & BRAGG’s! But my brother makes this killerrrr olive oil/garlick-y one too!
