Today, I had some serious responsibilities to attend to: catching up on all the TV I’ve missed in the past few weeks!
First of all, I vote for our next blogger meet up to be held at Cafe Disco. You can thank the Office for that.
Second of all, LOST writers: what the hell are you thinking?! I am never going to figure this show out. But I have to say, I think Sayid is quite a fine piece of male specimen. Ya know what I’m sayin’?

Oh right, this is a food blog
I woke up craving waffles, so that’s what I ended up having for breakfast.

Kashi Blueberry waffles with smooth PB, a banana, strawberries & cinnamon
I bummed around for a while, cleaned my room and then got to my workout. Last night I read an article that said you should do strength training before cardio for maximum fat burn. So I did:
- Shred with Jillian…I’m only on Level 1. This is why I’m never going to make it into the blog-world’s equivalent of the NYT’s Week in Review. I am way behind the times.
- 3 miles on the treadmill (1 mile run, 2 miles intervals)
- Polly’s yoga for runners. Love it!
For lunch, I made a simple sandwich and had a bell pepper on the side.

My last piece of Arnold's Real Jewish Rye bread with goat cheese, deli roasted turkey, tomatoes, red onion, cucumbers & thai basil leaves
I was still hungry afterward, so I made a delicious smoothie. Hello, new obsession!

- 2 TBS ff Fage
- 1 TBS Hemp Protein powder
- ~1/4 cup soy milk
- frozen berries
- frozen mango chunks
- frozen mixed fruit
This did the trick. Then I caught up on shows pretty much until dinner time. I have more final papers to write but I feel so burnt out from this weekend that I felt like taking a whole day off.
For dinner, I made something new, I’m on a recipe roll here!

Ricotta Stuffed Chicken (makes 2)
- chicken breast
- part-skim ricotta
- thai basil leaves
- cilantro, oregano, black pepper
- Pasta sauce (I used Newman’s Own Sockarooni Sauce)
Directions:
- Preheat oven to 350F.
- Mix 1/2 cup of the ricotta with basil leaves & cilantro
- Rub chicken breast in black pepper & oregano. Spoon the ricotta into each chicken breast and fold in half.
- Put on a baking dish and top with 1/2 cup pasta sauce.
- Bake for 25-30 minutes.
This was so delicious and so easy! I had mine with butternut squash wedges & steamed broccoli:

I think all food blogs have a little wiggle room for totally sexy men. Or women! I love it all!
I adore you, just so you know. I’ve heard that about cardio and strength too. But then I hear the opposite. I hate it!

I don’t eat meat, but my husband has been making stuffed chicken when we have friends over. I think it looks impressive to guests.

muhahaha My most recent obsession must be with hummus mixed with canned tuna all eaten in a sandwich with half an avocado. YUMmmmm
