This week has been pretty horrendous in terms of schoolwork and my hunger’s been bitchin’. I feel like I’m hungry all day long, but I know it’s because I’m stressing out and that makes me even more stressed out, you know what I mean? It’s also been affecting my eats since I’m so burnt out, I don’t have any creativity left for the kitchen.

I’m so glad I’m done with classes for the week, and even though my weekend will be spent doing homework, I hope to refresh my life a little bit.

But, for breakfast, I had another bowl of overnight goodness: Apple Crisp Oats!

I put 1/2 cup oats, 1/2 cup water, 1/2 cup soy milk, 1/2 a cubed apple, cinnamon, vanilla and nutmeg in the fridge overnight. In the morning, I microwaved it and topped it with more cubed apple and cinnamon sugar & Pam Anderson PB, just for kicks. Delicious!

For lunch, I think my containers are more exciting than the contents, that’s how boring it is…In the sandwich department, we have chicken breast, Laughing Cow Light Swiss wedge, spinach and tomato on a sandwich thin. In the fruit aisle: a small pear, some apple, blueberries & a fig. I brought some nuts too.

Three classes later, I had to wait for my friend to meet me to go dorm storming for a new student group we’re trying to start. Dorm storming=covering every wall of dorm buildings with information about the group. Lots of stairs.

I needed extra fuel, so I grabbed a coffee while waiting:

After we were done, I was tired, hungry and cranky, what a great combo…I really didn’t want to go home and get all sweaty on the treadmill, so I decided to walk home instead (about 2 miles). It was good to clear my head and get some non-homework alone time.

Dinner: I’ve dreaming about butternut squash fries all week and these didn’t disappoint. Where have they been all my life?

I also had another one of my “what’s in the fridge that I can throw in the same bowl and microwave” meals. It turned out to be 1/2 cup Near East Broccoli & Cheese Couscous, broc, asparagus, tofu in stir fry sauce, about a tablespoon of black beans and salsa.

I can’t tell if this was really good or I was just terribly hungry.

I STILL wanted something, preferably sweet and crunchy to stuff my face with, so I had a bag of this, which is my favorite microwavable popcorn EVA. Good thing it’s portioned out because my brain wouldn’t recognize that.

Crunchy, sweet, 4 grams of protein and fiber. That’s why you’re my fave, Orville!

Sorry I’m so boring but I swear I have more fun things coming up, once I refuel my humanity juices. Now I’m gonna get in bed and read (for school, but it’s not bad) and hopefully, wake up feeling ballinesque tomorrow!

You ate more of that couscous?! Good for you, girl. I dumped my pot o beans. After the stomach woes, I didn’t even want those things in my fridge!

You ain’t boring deary. In fact, I LOOOOVE the butternut squash and of course, a HUUUUUUGE lover of that exact same kettle corn. I actually love another brand (jolly time) better because it’s sweeter, but i buy the boxes of 10 from Orville’s because it’s a better bang for your buck!

DO NOT STRESS deary. All will be good after papers, tests, and all!!

(virtual hugs). I know exactly how you feel-this was me last week. Just remember it IS only school-as bad as that sounds, there are more important things and you can only do your best. Try to move as much as you can-it will keep you sane!

I love your sandwich container. it’s adorable!

Today, I tried POM juice in my overnight oats. it was fantastic. I actually don’t heat up my oats. Instead, I just eat it with mix of Fage 0%. I highly recommend it ;]

totally hear ya on the school work and stressing and appetite. right there with you; so frustrating! can’t figure it out.
